INGREDIENTS:
- 1 egg
- 2 tbsp Tapi Go! Tapioca Flour
- 2 tbsp light ricotta cheese
- Spinach
- 2 tbsp sun dried tomatoes
- 1 tsp olive oil
- Salt, to taste
- Pepper, to taste
INSTRUCTIONS:
- Whisk together the eggs with Tapi Go! Tapioca Flour and mix until there are no visible lumps.
- Heat a 20cm crepe frypan on medium heat and pour the batter.
- When Wrapioca edges starts to peel off the pan, flip it and wait 30 seconds.
- Flip it again and immediately add the fillings: ricotta cheese, spinach leaves, and sun dried tomatoes.
- Add olive oil, salt and pepper to taste.
- Fold or roll out the Wrapioca and serve to eat while warm.
