  • 1 egg
  • 2 tbsp Tapi Go! Tapioca Flour
  • 2 tbsp light ricotta cheese
  • Spinach
  • 2 tbsp sun dried tomatoes
  • 1 tsp olive oil
  • Salt, to taste
  • Pepper, to taste


  1. Whisk together the eggs with Tapi Go! Tapioca Flour and mix until there are no visible lumps.
  1. Heat a 20cm crepe frypan on medium heat and pour the batter.
  1. When Wrapioca edges starts to peel off the pan, flip it and wait 30 seconds.
  1. Flip it again and immediately add the fillings: ricotta cheese, spinach leaves, and sun dried tomatoes.
  1. Add olive oil, salt and pepper to taste.
  1. Fold or roll out the Wrapioca and serve to eat while warm.
