BANANA CAKE
A delicious cake for afternoon coffee can’t go wrong.

INGREDIENTS:
- 1 cup of smashed bananas
- 3 eggs
- 1 tbspapple cider vinegar
- ½ tsp vanilla extract
- ½ tsp salt
- ½ cup of Brown sugar
- ⅓ cup of vegetable oil
- 1 cup of oat flour
- ½ cup of Tapi Go! Cocoa Hydrated Tapioca Starch
- 2 tbsp cocoa powder
- 1 tbsp baking powder
- ½ tsp baking soda
- ⅓ cup of crushed 70% chocolate
- Sauce (optional)
- 2 tbsp cocoa powder
- 1 tbsp coconut oil
- 1 tbsp brown sugar
- 100mL of water
INSTRUCTIONS:
- Preheat the oven to 350ºF.
- Grease and flour with cocoa power a bundt cake pan.
- In a large bowl, combine the smashed bananas, eggs, apple cider vinegar, vanilla extract, and salt, and mix well.
- Add the brown sugar and vegetable oil and mix until combined.
- Stir in the oat flour, Tapi Go! Cocoa Hydrated Tapioca Starch and cocoa. Finalize with baking powder, baking soda, and chocolate pieces.
- Pour the batter into the prepared pan and transfer to the preheated oven for 20 min or until a tester inserted in the center comes out clean.
- Let the cake cool for 10 minutes before removing from the pan.
- For the sauce, pour all its ingredients in a small sauce pan and bring it to low-medium heat. Stir until you see bubbles.
- Pour the sauce over the cake.
